Of all of the styles a winemaker can choose from to produce a Chardonnay, we feel that this is the classic.
The fruit was picked cold, whole cluster pressed, settled and racked and then just left alone to mature. 75% was aged in stainless steel and 25% was aged in new French oak. Upon opening the bottle it bursts with aromas of caramel, vanilla and hazelnuts. As you allow it to open up, new layers of tropical fruit and citrus are revealed. When you walk through the vineyard and pop these grapes into your mouth as you are sugar sampling all of these flavors are there and it is a delight to still find them in the wine. There was no malo-lactic fermentation done so the wine retains a high acidity and crispness that will allow it to age beautifully for the next 5-6 years.
