2005 Rutherford Cabernet Sauvignon

Finally back to his Rutherford roots and grapes, Gustavo took great delight in creating this wine. He is proud to appellation designate this wine as it is 100% Rutherford Cabernet. The fruit was all from a single vineyard block of the Galleron Vineyards in Rutherford. We used a French yeast and put 60% of the juice into new French oak and 40% in one year old French barrels. The tannin structure of the Rutherford Cabernet is much tighter than the Atlas Peak appellation from where we sourced our Napa Valley Cabernet. This is a classic Rutherford Cabernet � great �dust�, tobacco, black licorice, cocoa and sweet red cherries fill your nose and mouth. There are mouth-filling tannins that beg for this to be served with a chunk of red meat. 250 cases produced.
